Preparing to go camping involves packing your food wisely. But sometimes, when it comes to the camp menu, it can really be easy to go over the top – only to find out before leaving home that the car had become overcrowded with all the cooking gear and ingredients you had brought. You can easily resolve this situation by preparing packages for a one pot meal or two ahead of time.
There are many camping recipes that are very easy to pack and even easier to cook. Some need only a package of beef, fresh green beans, and beef stew seasoning mix, and viola, you’ve got a delicious one pot meal in no time.
So if you’re looking for simple cooking and camping recipes to try out on your next trip, the following one-pot meals and recipes may just perk your outdoor appetite!
Our Favorite One Pot Meals
Pork Chop Delight
Prep Time: 5 minutes
Cook Time: 20-30 minutes
Servings: 2 servings
Ingredients:
2 pork chops
Cooking oil (enough to coat the bottom of the pot)
Fresh green beans
2 medium sized potatoes, thickly sliced
1 small onion
Preparation: Dice the onion and thickly slice the potatoes. Wash the fresh green beans.
Cooking Instructions
Brown the pork chops in the bottom of the pot without fully cooking them. After this, remove the chops and grease then set aside. You then layer the fresh green beans, the potatoes, and then the onion. Add water to cover the potatoes. Put the pork chops on top, pour the grease, add spices as well as salt and pepper to taste. Slowly bring up the heat and simmer. Stir occasionally to ensure that the green beans don’t stick to the bottom of the pan. After 20 minutes, check the potatoes, if they are soft, remove the pot from the fire and enjoy your dinner. You can also serve with rice.
Comments: Buy only a very small onion so as not to overwhelm the pork chop flavor.
Easiest One-Pot Pasta Meal
Prep Time: 10 minutes
Cook Time: 15-2 0minutes
Servings: 2 servings
Ingredients:
500g Pasta
125g Italian dressing
125g cheese, diced
1 small onion, diced
3-4 carrots, chopped
1 small can pineapple chunks
Green onions
Salt and pepper to taste
Whatever else you want to add (more veggies, chicken, etc)
Preparation: Dice up the cheese and onion. Chop the carrots. Open the Italian dressing and the can of pineapple chunks. Prepare the other ingredients you want to include.
Cooking Instructions
Boil the pasta, make sure it’s cooked al dente and drain. Add the cheese, onion, carrots, pineapple chunks, and the other ingredients you want. Stir in the Italian dressing…and that’s it!
Comment: You can make this dish your very own by adding whatever you want – other vegetables, meat (chicken, tuna, ham), and enhancing the dressing.
One-Pot Bubble and Squeak
Prep Time: 15 minutes
Cook Time: 30 minutes
Servings: 6-8 servings
Ingredients:
1 small cabbage, coarsely chopped
2-3 large potatoes, cubed
1-2 smoked kielbasa sausages, sliced
¼ cup water
Preparation: Peel and cube the potatoes, coarsely chop the cabbage, and slice the sausages.
Cooking Instructions
In a large pot, layer the cabbage, potatoes and sausages, repeat layers, add water and simmer until potatoes are tender.
Comments: You can adjust the amount of ingredients by simply adding more cabbage, potatoes and sausages.
Trailer Park Hash
Prep Time: 5 minutes
Cook Time: 30 minutes
Servings: 2 servings
Ingredients:
500g ground beef
1 small can of Bushed Baked Bans (country style)
1 small onion, chopped
2 medium potatoes, quartered
Preparation: Cut the potatoes into quarters, chop the onions, and open the can of Bushed Baked Bans.
Cooking Instructions
In Dutch oven or large skillet, cook the potatoes until they are about done. Add the chopped onion and ground beef. Cook until beef is done then add the baked beans and stir.
My Grandma’s Goulash
Prep Time: 10 minutes
Cook Time: 30-30 minutes
Servings: 2 servings
Ingredients:
¾ cup elbow or shell macaroni
500g ground beef
1 small onion, chopped
1 small tomato, chunked
1 small can tomato paste
½ tsp Lawry’s salt
Cooking oil
Salt and pepper
Preparation: Chop onion, chunk the tomato and open the can of tomato paste.
Cooking instructions
Cook macaroni in a large pot according to package directions, making sure it’s al dente. Drain the pasta, rinse the pot and wipe any excess starch. Next, add a small amount of oil to the pot and brown the beef. Drain off excess oil, lower the temperature, and add in all the other ingredients except for the tomato paste. Let this cook for a few minutes then add a cup of water and stir in the tomato paste to dissolve. Let this simmer for about 5 minutes or to the thickness you prefer, stirring occasionally.
Apple Cobbler by a Happy Camper
Prep Time: 10 minutes
Cook Time: 30-40 minutes
Servings: 4-6 servings
Ingredients
5-6 large Granny Smith apples, cored and sliced
1 cup brown sugar
1 box yellow cake mix
1 stick butter
cinnamon
Preparation: Core and slice the apples.
Cooking Instructions
Line the Dutch oven with tin foil. Layer the cored and sliced apples in the bottom of the Dutch oven, then sprinkle with brown sugar. Next, spread the cake mix over the apples but do not mix. Place lumps of butter over the cake mix and sprinkle with cinnamon. Cover the Dutch oven and place around 15 hot coals on top. Then place the oven over the hot coals. Check after about 30-40 minutes. You’ll know it’s done when the crust is brown and the apples and brown sugar are bubbling through the crust.
